ELITE — NEW FUNCTIONAL ENCAPSULATED FOODS FOR THE FEEDING OF INDIVIDUALS WITH HIGH PATHOLOGICAL VULNERABILITY

THE ELITE PROJECT WILL FOCUS ON THE STUDY AND DEVELOPMENT OF ENCAPSULATION PROCESSES OF FUNCTIONAL COMPOUNDS OR FERMENTABLE SUBSTRATES SO AS TO REALISE MICROREATTORI.THE FUNCTIONAL COMPONENTS IN THIS WAY WILL SUBSEQUENTLY BE SUBJECTED TO VITALITY CHECKS DURING IN VITRO DIGESTIVE PROCESSES. AFTER VERIFYING THE STRENGTH OF THE POST-DIGESTION FUNCTIONAL COMPONENTS, THE PRODUCTION OF ENCAPSULATED FUNCTIONAL COMPONENTS TO BE ADDED TO EXISTING COMPANY PRODUCTS WILL BE CARRIED OUT, IN ORDER TO PROVIDE ADDED VALUE AND CREATE NEW PRODUCTS FOR THE FEEDING OF CATEGORIES OF PEOPLE WITH HIGH PATHOLOGICAL VULNERABILITY. For the realisation of the project we propose to enter into ORGANIC professionalism IDONEE TO WORK IN COLLABORATION WITH SECTOR R&D COMPIENDAL AND prone to DIDACTIC activity. THE PROFESSIONALISM TO BE IDENTIFIED MUST ALSO BE ABLE TO TRANSFER, THROUGH THE TEACHING ACTIVITY, SKILLS IN ENGINEERING AND AGROALIME
