The overall objective of this project within the food system is to increase knowledge and better understanding of the topics concerned in the development of high-quality, safe and innovative food and their subsequent environmental and energy processing through scientific research activities. These scientific research activities will have the potential to exploit such knowledge in terms of the sustainable health of 21st century consumers, taking into account the vulnerable population groups, with dissemination of results on a non-exclusive and non-discriminatory basis, as a priority through the teaching and publication of scientific articles.
