THE PROJECT, IN THE CONTEXT OF A SMART FOOD AGRIFOOD SECTOR, AIMS TO INNOVATE THE TRANSFORMATION PROCESSES OF THE MOLUMSCICOLA SECTOR IN ORDER TO INCREASE THE QUALITY AND SAFETY OF THE PRODUCT, AS WELL AS THE DRIVER OF INNOVATION IN THE SUSTAINABILITY OF THE ENVIRONMENT THROUGH AN INDUSTRIAL RESEARCH PLAN THAT INTEGRATES THE SKILLS OF PROCESSING COMPANIES (ENABLING ADVANCED PRODUCTION SYSTEMS), BIOTECH COMPANIES AND RESEARCH ENTITIES (ENABLING INDUSTRIAL BIOTECHNOLOGY TECHNOLOGY). AT PRESENT, THERE ARE NO ESTABLISHED METHODS OF TRACEABILITY BASED ON THE ANALYSIS OF MICROBIAL COMMUNITIES. THE OBJECTIVE OF THE PROJECT IS THE DEVELOPMENT OF AN INNOVATIVE METHOD FOR THE TRACEABILITY OF THE PRODUCT, WHICH IS INITIALLY APPLIED TO THE PHILIPPINE CLAM R. PHILIPPINARUM, AND IS THEN EASILY APPLIED/TRANSFERRED TO OTHER SPECIES OF LOCAL INTEREST AND INTEREST OF THE FISHING DISTRICT OF ROVIGO AND CHIOGGIA, SUCH AS:
